My first experiences with a slow cooker were making stews. Two months later, my dad reminded me that we have a slow cooker, and he suggested to look for some recipes online. Since I missed cooking, I decided to oblige him. Last week, I made Asian chicken that came out way too salty. It was good, just too salty! I put the chicken on a bed of lettuce and served it with some steamed veggies-from-a-bag.
This week, I decided to try pulled pork with coleslaw on the side, and for the pulled pork, I followed Skinnytaste’s recipe. HOMG. NOM, NOM, NOM. The pulled pork turned out great, and the coleslaw (I kind of improvised it) was a great accompaniment. In fact, I actually liked the coleslaw better than the pulled pork! Daddy and I both enjoyed this meal, and I am really loving this slow cooker! Such a convenient cooking appliance!
Slow cooker Pulled Pork with Coleslaw
Pulled pork ingredients
2 pounds boneless pork loins trimmed of fat
2 teaspoon vinegar (I used Korean brown rice vinegar)
2 teaspoon liquid Hickory smoke
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1/2 cup of BBQ sauce
Buns or lettuce or anything to serve the pulled pork
1. Put the pork in the slow cooker and season it with vinegar, liquid smoke, garlic powder, salt, and pepper. Cook for 6 hours on HIGH.
2. Remove the pork and save half of the liquid in the pot. Shred the pork with two forks.
3. Add the shredded pork and BBQ sauce into the slow cooker. Mix and cook for 1 hour on HIGH.
4. Serve and enjoy!
1/4 cabbage, julienned
1 small carrot, julienned
1/2 onion, julienned
1 garlic, minced
1/4 cup of olive oil
1/4 cup of rice vinegar
1 teaspoon black pepper
1. Mix all the ingredient together in a large bowl.
2. Chill for at least two hours and serve.
FYI, the coleslaw recipe is a guesstimation. I kind of eyeballed the dressing ingredient and taste-tested as I went. Either or, it turned out great. Vinegar-based coleslaw is my new favourite thing! Kind of funny since until today, my dad was used to seeing coleslaw with mayonnaise! Well, turns out we don’t need mayonnaise for this salad! ^_^
