Oh, my nomminess! I think this salad recipe is the best thing ever! Who knew that spinach and strawberry would make a great combination along with home-made strawberry vinaigrette, pecans, and feta cheese? Nommmmm. I threw in the baked Cajun chicken tenderloins because I wanted something to go with the salad. Cajun and strawberry doesn’t sound very complimentary, but it ended up tasting good. I highly recommend this salad recipe. It really is awesome.
Strawberry & Spinach Salad
5 cups baby spinach
1 pint sliced fresh strawberries
1/2 cup crumbled feta cheese
1/2 cup pecans
2 tsp. strawberry jam
1 tbsp. balsamic vinegar
3 tbsp. extra virgin olive oil
salt and pepper, to taste
1. To make the vinaigrette, place the strawberry jam in a large bowl and whisk in the vinegar until everything is well-mixed. Keep whisking the mixture and slowly add in the olive oil. Whisk until the dressing doesn’t look like it’s separating. Season the dressing with salt and pepper.
2. Add the spinach, strawberries, feta cheese and pecans to the bowl and toss the ingredients together until everything is coated with the dressing. Serve immediately.
